Wonton a delicious dinner? Try some dim sum.

My mom bought one of those bamboo steamers for making wontons or any sort of dumpling. She was excited to try out a recipe so we gathered our supplies and got to work.

Pork and Cabbage Dim Sum:

1/2 pound ground pork
2 garlic cloves
1 Tbsp grated fresh ginger
2 egg whites
1/2 lemon juiced
1 Tbsp low sodium soy sauce
1 Tbsp sesame oil
1 package of wonton wrappers
savoy cabbage


Mix the filling together, make sure it is all mixed. Take a wonton wrapper, put about a tablespoon of pork mixture into the wrappers then dip your finger into some water and outline the edge of the wrapper with the water. Then use that to seal the dumpling together. Pull up to opposite corners and seal, then pull the opposite corners and seal.

Then on the bottom of each layer cover with a few pieces of savoy cabbage. Continue with the dim sum and place them on top of the cabbage leaves. Then for those who prefer a gluten-free option can use some savoy cabbage leaves as the wonton wrappers. Simply place a tablespoon of mixture in the center of the cooked cabbage and wrap up using the sides like a burrito. Fill up the bamboo steamer basket with one layer only. Bring one to two inches of water in a pot to boil and place steamer on top. Steam for 10-12 minutes. Serve with soy sauce!





Three Bean Salad
1 can kidney beans
1 can cannellini beans
1 can black beans
1 small package of frozen peas
1 Tbsp sesame oil
1 tsp salt
1 tsp pepper

For an easy, delicious protein packed side dish we mixed together a variety of beans (you can use whatever you have on hand) added in some sesame oil to keep in the Asian flair and of course salt and pepper. Let marry in the fridge before serving.

Mediterranean Seafood Salad

Now that April is finally here, spring has sprung! Which means it's time to kick up our healthy diets and hide away all those heavy, holiday foods. Combining seafood, a light pasta and greens is an excellent way to rejuvenate your body with energy, protein and antioxidants.

Mediterranean Seafood Salad
1/2 pound calamari
1/2 pound shrimp
1 1/2 cups orzo pasta
5 cups herb salad (you can find this packaged together at your grocery store, if not you can pair together any of your favorite herbs: I love fresh dill, arugula, endive, radicchio and spinach)
1 bag of frozen speckled butter beans
1/2 lemon
4 cups chicken stock
2 zucchini
1 yellow squash
1/2 green pepper
3 scallions
olive oil
salt
pepper



First you want to slice your veggies and toss them in olive oil, salt and pepper then place them on the grill for about 4 minutes per side. While the veggies are grilling, heat up your chicken stock to cook the orzo. Once the veggies are grilled, place the squid and shrimp on the grill for two minutes per side. Once they are done, place them on a cutting board to cool before you add to the salad. Heat up your butter beans in a few tablespoons of chicken stock, until tender. Add the herb salad to your large serving bowl, add in the grilled  veggies, cooked orzo, then slice up your squid into rings- add that in and lastly place your beautiful shrimp atop your lovely, earthy, scrumptious salad.

This salad would be perfect for any girls night in, in-law dinner, or just a romantic evening- pair with a bottle of Becker Chardonnay (my favorite) and you're perfecto! Ciao!

Laisser les bons temps rouler!!!

As the Cajun's like to say...let the good times roll! New Orleans is a great place to visit, when you live in Texas it feels like a grand vacation! Delicious food, great sights, drinkable hurricanes...what else could you ask for?! 


I felt like bringing a bit of New Orleans into our kitchen so I grabbed my leftover turkey cutlets, butter beans and brussel sprouts out of the fridge and worked up a 'magnifique' Cajun concoction! 


Cajun Turkey

turkey cutlets (or chicken)
1/8 tsp paprika
1/8 tsp garlic powder
1/8 tsp onion powder
a pinch of cayenne pepper
1/8 tsp salt
a pinch of pepper
1/8 tsp thyme
1/8 tsp oregano

Rinse the turkey and mix the spices together, sprinkle the spices over the cutlets, place on a saute pan with olive oil and cook for 20-25 minutes.



Creamy Butter Beans


I love beans, they are high in protein, filling and go with any meal. Lately I've been exploring more bean options (I'm a sucker for black beans), I found butter beans (if you don't have butter beans use Great Northern beans, cannelini beans, kidney beans or black beans). They are larger and very creamy in texture. I added them from the can to a sauce pan with a touch of olive oil, milk and a sprinkle of flour on medium-low heat. The combination of milk and flour will create a luscious, creamy sauce with the beans. 


Brussel Sprouts with Red Onion and Garlic

I had frozen brussel sprouts in the freezer, I threw those in a saute pan with a bit of olive oil along with sliced red onion and crushed garlic. Sprinkle a bit of salt and pepper and let saute for about 10-15 minutes.

This meal is easy to prepare and sensational on the palate! Pair this dish with a chardonnay, rum hurricane or red zinfandel.

Quick & Healthy Summer Meal

Summers as much as we'd like them to be relaxing, oftentimes are not. Moms are running around shuffling kids from summer camp to sleepovers. My husband starts two-a-day football practices in August and I have to keep him eating healthy and quick because he is always trying to get work done.

On this night in particular, I had some pre-seasoned BBQ chicken, frozen corn, cucumbers and extra Mexican Crema. I decided to put the chicken in the oven and while that was baking, I decided to make a fresh cucumber salad.


Dill-Cucumber Salad

1 large English cucumber
1/4 cup Mexican Crema (sour cream, plain yogurt or Creme Fraiche)
1 tsp dill
pinch salt
pinch pepper

First thing you need to do is slice the cucumber and place the slices in a colander covered in salt. This will help release the moisture inside the cucumbers so your salad isn't runny. Let the cucumber slices sit for 15 minutes. In the meantime, combine your crema and spices- place that into the fridge to chill. Once cucumbers are drained and rinsed, pat them dry with a paper towel. Add slices to the crema, smother and let chill in fridge.







Onion-Garlicky Corn

1 cup corn
1 clove garlic
1/4 yellow onion
salt
pepper

Chop up onion and garlic, place into a saute pan with olive oil. Once onions are golden, add corn, turn heat down and cover. A few minutes later add salt and pepper, cover until ready to serve.

Once the chicken is ready, plate the corn top with chicken and put the cucumber salad into a separate dish to keep the crema from getting on the other dish items.

This dish is a perfect summer dish, pair with some pinot grigio, moscato d'asti or Shiner Bock's Ruby Red summer beer!
