Mama's Brunch

I love watching Food Network, I gain a lot of my inspiration for cooking from here. Bobby Flay is a pretty incredible cook, I love his show Brunch at Bobby's. Brunch is my all-time favorite meal. I absolutely love it. When I became a mom I knew I would want to host a brunch with all the mamas and babies. After a few months to get my bearings, I was able to do so. I utilized one of Bobby Flay's brunches as my foundation and tweaked the recipes just a bit to fit in my cooking style.

Orange-Ricotta Pancakes with Fig Compote

3/4 cup flour
2 Tbsp sugar
1/2 tsp  baking powder
salt
1 cup ricotta cheese
3/4 cup milk
3 eggs, separated
1/2 tsp vanilla
orange zest
butter

Fig Compote
12 oz figs
4 Tbsp butter
1/4 cup honey
1/4 cup dark brown sugar
1/2 cup trail mix (or any nuts you have around)
salt
pepper

Mix dry ingredients together. Then combine ricotta, milk, egg yolks, vanilla and zest in a separate bowl until smooth. Beat the egg whites in a standing mixer until stiff. Add dry ingredients to the ricotta and milk, fold to combine. Whisk in small amount of egg whites to lighten the batter, then fold in the remaining egg whites. I heated up my griddle and brushed the surface with butter. Use 1/3 cup to scoop batter onto the griddle. When bubbles start to appear, flip.

Add all ingredients for compote together in a small sauce pan, cook over high heat and stir frequently. Should take about two minutes for the figs to soften and break down. Pour into bowl for serving.

Italian Home Fries
3 Tbsp butter
3 cloves garlic
1 small onion, sliced thinly
1 small red bell pepper, diced
1 small yellow pepper, diced
1 1/2 lbs small new potatoes, diced
8 oz Italian hot sausage, remove from casing
1 Tbsp finely chopped fresh rosemary
2 Tbsp finely chopped fresh flat-leaf parsley
drizzle olive oil
salt & pepper

The night before (to save time) I chopped everything up and put it into a ziploc bag. I stuck it into the fridge and the next morning, heated up the butter on the griddle and poured the ingredients onto the griddle pan. I added the fresh herbs once the onions, peppers and potatoes started to cook. The smell is incredible! Once the sausage is browned, cooked through and potatoes are crunchy on the outside and soft on the inside, your home fries are done!

Soft Scrambled Eggs with Italian Cheese and Tomato Bruschetta
1 loaf of Italian bread
olive oil
salt & pepper
3 large tomatoes, roughly chopped
handful of basil, julienne
10 large eggs
4 oz Italian cheeses

Preheat grill pan over medium heat, slice bread, drizzle with olive oil and place down on pan. While bread toasts, toss tomatoes, olive oil, salt, pepper and julienne basil in a bowl. Once bread is toasted, mound the tomato mixture on top.

Melt butter into a large saute pan over low heat. Crack eggs into a separate bowl and whisk until fluffy. Add in coarse black pepper. Add eggs into the pan, mix gently with rubber spatula. Fold in cheese and after a few minutes remove from heat. Serve eggs with bruschetta.

Orange-Pineapple Mimosas
champagne or prosecco
orange juice
pineapple juice

I love changing up mimosa flavors, find any yummy juice or nectar and top that off in your champagne glass.

Blueberry-Fennel Ice
ice cube tray
water
blueberries
fennel sprigs

I decided to jazz up my ice for serving water, so I put a few blueberries and fennel sprigs in the cube tray. Freeze and it looks pretty with the color. You can use any fruit, herbs, etc.

It was so wonderful to get together with my great mama
friends and to see their babies. Our little ones played and we took some adorable pictures. This brunch is great for any gathering.

Enjoy! xo Lo

Texas Pickled Veggies

One of things I've always wanted to learn was how to pickle...I love pickled veggies. During our spring break my husband and I decided to give it a go. We perused through the produce section of our local market and grabbed various veggies to pickle then we got started.

Texas Pickled Veggies
1/2 pound pickling cucumbers
1/4 pound fresh green beans
3 carrots
1 pound of okra
8 cloves of garlic
fresh dill
fresh cilantro
4 Tbsp honey
3/4 quart of white vinegar
6 Mason jars (any size)
pickling spices (coriander seeds, mustard seeds, cinnamon, ginger, bay leaves, red pepper flakes, caraway, allspice, black pepper and cloves- most grocery stores should have a mixed pickling spice you can purchase instead of purchasing all of these separately)

First thing you want to do is sterilize your glass jars. Bring water to a boil and let the jars soak in the boiling water to sterilize. Do not handle these jars with your hands after this point, use tongs.

Next, pour your white vinegar into a large sauce pot, add in the honey and pickling spices bring to a boil. Let boil for two minutes. Then remove from heat and let the liquid come to room temperature.

While the pickling liquid is cooling start to chop your veggies and herbs. With the carrots I sliced them into discs, I chopped the ends off the green beans and sliced up some of the cucumbers into discs and some into spears. I roughly chopped my herbs. Then we started to assemble our veggies into their jars.

You can assemble these any way you want, I decided to put smashed garlic in the bottom of each jar, then in one jar I put all green beans, one was all pickle spears and another was all okra; the rest of our jars we put a mix of veggies. I had six jars to fill, you can also use any veggies you want- some use cauliflower, broccoli, mushrooms, green tomatoes, daikon, etc.

Once the pickling liquid is cooled to room temperature, add the herbs, stir and gently pour into each jar. Make sure to stuff the pickling spices into each jar, fill to the top and seal the jars together. I put these straight into the fridge, you can leave them in the pickling liquid for 24 hours up to a month or even longer.

Try this awesome recipe out & enjoy! xoxo Lo

Spooky Spaghetti Squash

During the Autumn season there are several different kinds of produce to take advantage of, there are many squashes, gourds, etc to dive into for your meals. One of my favorite kinds of squash is the spaghetti squash, not only is this squash pretty awesome in creation but it's tasty too. The best part about spaghetti squash is you can make savory or sweet dishes when using it. This time I decided to go savory.

Spaghetti Squash with Baby Portabella Mushrooms and Marinara Sauce

1 spaghetti squash
1 package of baby portabella mushrooms
1 jar of marinara sauce (or see recipe below to make your own)
1 yellow onion
3 garlic cloves
olive oil
fresh oregano
salt
pepper

Firstly, you want to get your spaghetti squash tender, cut in half length-wise, de-seed and bake at 425 degrees for an hour.

Meanwhile, saute mushrooms, onion and garlic in a saute pan over medium heat until tender. Put marinara sauce over medium heat to warm and add mushroom mixture.

Once the squash is tender, let cool for 10 minutes then take a fork and scrape the squash, as you scrape pieces that look similar to spaghetti pasta should start to come off. Scrape all of the "spaghetti" into bowls.

Homemade Marinara Sauce

3 12 oz cans of plain tomato sauce
1 12 oz can of plain tomato paste
2 12 oz cans of tomato pieces
2 yellow onions
5 garlic cloves
1 bay leaf
1 bunch of fresh basil
1 bunch of fresh oregano
water (as needed)
salt
pepper
meat (if you are making a meat sauce, use ground beef, ground turkey or turkey sausage)

Cook tomato sauce, paste and pieces over medium-low heat. Add in spices (if dry), water, onion, garlic and herbs. Let simmer for one hour and add fresh herbs for last 15 minutes. Marinara sauce should reduce down, add any veggies or meats you like to it.

Pour marinara sauce over spaghetti squash and grade a little bit of mozzarella or parmesan over the top and dig in!

Autumn-Inspired Butternut Squash Gnocchi

Hello! Hope you are all having a marvelous Monday! I made a delicious Autumn-inspired recipe last night and thought I would share it with you all J

Butternut Squash Gnocchi with Fresh Sage

2 lbs of butternut squash (or pumpkin, or acorn squash or any potatoes)
2 cups flour
¼ cup yellow onion
2 garlic cloves
3 Tbsp olive oil
6 leaves of fresh sage (or any other fresh herb you like)
Salt/pepper
3 egg yolks

Place butternut squash in large pot or Dutch oven and fill with water, have heat on high to boil. Once water is boiling, keep on a rolling boil until the squash is tender. Meanwhile, heat sauté pan and chop up onion, garlic and three leaves of sage, very small. Drizzle 1 Tbsp of olive oil in sauté pan and cook onion, garlic & herb mixture til crispy.

When squash is tender, drain and set aside to cool for 10 minutes. Once the butternut squash is cool, cut off ends, slice in half length-wise and de-seed/peel. Chop up into small pieces and place in a large bowl. Mash squash like you would with mashed potatoes. Add 1 Tbsp of olive oil to keep smooth, add in egg yolks, flour, salt pepper and other three leaves of fresh herbs. Fold together with a spatula then you might want to start using your hands as the dough forms.

Once the dough is firm, roll out onto a floured surface and slice into long strips. Then slice the strips into little squares about one inch x one inch. Heat salted water again on the stove and drop gnocchi pillows into the boiling water. Once the gnocchi rise to the top (like dumplings) they are done (about 3-5 minutes) depending on the thickness of the gnocchi.

Once the gnocchi is done, drain and place on a paper towel to air dry (about 5 minutes). Then place them in your bowl, drizzle with olive oil, sprinkle with crispy onion, garlic & sage and shave chunks of parmesan on top and ta da! So delicious! My husband approved too J

Piled High Southwestern Burger

Who doesn't love burgers? There is a wide spectrum of burgers, my husband and I went to In n Out Burgers yesterday and they are simple and delicious. I like to find ways to spice it up a bit and create burgers that are outside of the box. On this summer day, my husband and I were working with the last bit of groceries we had. I had ground beef, veggies, eggs, black beans and cornmeal. I decided to whip up piled high southwestern burgers on black beans, green chile cornbread, sauteed onions, a fried egg, cherry tomatoes and fresh cilantro.

The first thing I did was form my beef patties, I added some salt, pepper and garlic then I set those aside and allowed the flavors to merry. I then started to make my green chile corn bread, I used one cup of organic stone ground corn meal, half a can of corn, a small can of green chiles, salt, pepper, one egg, 1/2 cup cheddar cheese and 1/4 cup of milk; mix this altogether and pour into a pan to bake at 350 degrees for about 30 minutes.

While the cornbread was baking, I poured a can of black beans into my sauce pan and cooked them on medium heat. Next, I chopped my onions into thin slices, sliced the cherry tomatoes in half and roughly chopped the fresh cilantro. I put the sliced onion into a saute pan with olive oil on medium heat, along with putting the burgers onto my grill pan with olive oil. My dad always taught me growing up that sauteed onions are the base to any delicious homemade recipe. I use olive oil because it is healthier than butter or other oils, plus I personally love the taste. After a few minutes I flip the burgers, check on the cornbread, stir the onions, stir the black beans and it's time for the eggs. I love eggs, I try to use them in every meal I make...especially fried eggs, I firmly believe fried eggs are Heaven topped on any meal :)

Once the cornbread was done, I removed it from the oven to cool. Then I cracked the eggs into a saute pan with (you guessed it!) olive oil. The key to a fantastic fried egg is generous portion of olive oil (2 Tbs), salt and pepper, then once it starts bubbling up flip over, when the egg is flipped over turn off the heat and let it finish for a few minutes. Then I began to pile my southwestern burgers, first I plated the black beans, next came the corn bread, the burger, sauteed onions, fried egg and last but not least fresh slices of tomato and cilantro.

Once you dig in, the yolk spreads it's luscious, velvety flavor all over the burger and that first bite is darn good! Enjoy! I'd love to hear your comments.
