Mama's Brunch

I love watching Food Network, I gain a lot of my inspiration for cooking from here. Bobby Flay is a pretty incredible cook, I love his show Brunch at Bobby's. Brunch is my all-time favorite meal. I absolutely love it. When I became a mom I knew I would want to host a brunch with all the mamas and babies. After a few months to get my bearings, I was able to do so. I utilized one of Bobby Flay's brunches as my foundation and tweaked the recipes just a bit to fit in my cooking style.

Orange-Ricotta Pancakes with Fig Compote

3/4 cup flour
2 Tbsp sugar
1/2 tsp  baking powder
salt
1 cup ricotta cheese
3/4 cup milk
3 eggs, separated
1/2 tsp vanilla
orange zest
butter

Fig Compote
12 oz figs
4 Tbsp butter
1/4 cup honey
1/4 cup dark brown sugar
1/2 cup trail mix (or any nuts you have around)
salt
pepper

Mix dry ingredients together. Then combine ricotta, milk, egg yolks, vanilla and zest in a separate bowl until smooth. Beat the egg whites in a standing mixer until stiff. Add dry ingredients to the ricotta and milk, fold to combine. Whisk in small amount of egg whites to lighten the batter, then fold in the remaining egg whites. I heated up my griddle and brushed the surface with butter. Use 1/3 cup to scoop batter onto the griddle. When bubbles start to appear, flip.

Add all ingredients for compote together in a small sauce pan, cook over high heat and stir frequently. Should take about two minutes for the figs to soften and break down. Pour into bowl for serving.




Italian Home Fries
3 Tbsp butter
3 cloves garlic
1 small onion, sliced thinly
1 small red bell pepper, diced
1 small yellow pepper, diced
1 1/2 lbs small new potatoes, diced
8 oz Italian hot sausage, remove from casing
1 Tbsp finely chopped fresh rosemary
2 Tbsp finely chopped fresh flat-leaf parsley
drizzle olive oil
salt & pepper

The night before (to save time) I chopped everything up and put it into a ziploc bag. I stuck it into the fridge and the next morning, heated up the butter on the griddle and poured the ingredients onto the griddle pan. I added the fresh herbs once the onions, peppers and potatoes started to cook. The smell is incredible! Once the sausage is browned, cooked through and potatoes are crunchy on the outside and soft on the inside, your home fries are done!


Soft Scrambled Eggs with Italian Cheese and Tomato Bruschetta
1 loaf of Italian bread
olive oil
salt & pepper
3 large tomatoes, roughly chopped
handful of basil, julienne
10 large eggs
4 oz Italian cheeses

Preheat grill pan over medium heat, slice bread, drizzle with olive oil and place down on pan. While bread toasts, toss tomatoes, olive oil, salt, pepper and julienne basil in a bowl. Once bread is toasted, mound the tomato mixture on top.

Melt butter into a large saute pan over low heat. Crack eggs into a separate bowl and whisk until fluffy. Add in coarse black pepper. Add eggs into the pan, mix gently with rubber spatula. Fold in cheese and after a few minutes remove from heat. Serve eggs with bruschetta.


Orange-Pineapple Mimosas
champagne or prosecco
orange juice
pineapple juice

I love changing up mimosa flavors, find any yummy juice or nectar and top that off in your champagne glass.

Blueberry-Fennel Ice
ice cube tray
water
blueberries
fennel sprigs

I decided to jazz up my ice for serving water, so I put a few blueberries and fennel sprigs in the cube tray. Freeze and it looks pretty with the color. You can use any fruit, herbs, etc.


It was so wonderful to get together with my great mama
friends and to see their babies. Our little ones played and we took some adorable pictures. This brunch is great for any gathering.

All Wrapped Up- Part One: Making Frozen Meals for Family

Now that I am 36 weeks pregnant I am making all those last minute preparations for our sweet girl's arrival. Of course, one of my biggest concerns is food...what will we eat? Thankfully, my best friend has rounded up some helpful family and friends who have offered to cook us meals during those first few weeks home with our Halen. But I know they can't provide every meal for us, so I've decided to do a frozen food series for new moms, families on the go or even for family reunions.

My first recipe for my frozen food series is breakfast burritos. My husband and I are huge fans of breakfast...especially me. So I wanted to make sure we'd have something yummy and satisfying when we're up in the wee hours.

Breakfast Burritos

24 tortillas
10 eggs
1 package of sausage
1 can black beans
2 large red potatoes
1 cup (+) colby jack cheese
salsa

When I originally found this recipe it wanted everything to be pre-made, frozen hash browns, etc. Well even though I am trying to save time by making food ahead doesn't mean I want health aspects to suffer. So I bought everything as naturally as I could and cooked it all myself. You can get any tortillas you like, I really like the ones that are half flour, half corn. Eggs, I always purchase free-range, brown eggs. For the sausage, I purchased hatch green chile sausage for a bit of a kick. I love my black beans and think they add not only extra protein to my burritos but they're so yummy. Red potatoes are healthier than your regular potatoes, colby jack cheese melts really well. And any salsa you prefer.

First thing you want to do is dice up your potatoes rather small and cook them in a large bottom
skillet with some olive oil. Once they start to brown, add in your diced sausage (you can also use ground sausage). Once those two are fully cooked and on the crispy side, scramble your eggs and pour them in the skillet. Turn your heat down and gently fold in your egg mixture. Add a pinch of salt and pepper, continue to fold. Once the eggs start to hold together and don't look runny you're about done. Add the egg mixture into a bowl and set up your wrapping station.



 You'll need plastic wrap, two large freezer Ziploc bags, your grated cheese and black beans ready to go. I would tear a few pieces of plastic wrap at a time so I didn't have to stop my process each time I needed more plastic wrap. Lay your tortilla down on the plastic wrap, fill with egg mixture, top with grated cheese, and a spoonful of black beans. Use the plastic wrap to wrap up the breakfast burrito nice and tight and set to the side.
Continue process until you've used all your eggs and tortillas. Then date and label your freezer bags, add the wrapped breakfast burritos inside, let out all the air, zip shut, and add into your freezer.









When you're ready to eat your frozen breakfast
burritos, simply take the number you want out of the bag, heat up add salsa on top and dig in! These are perfect for any mom-to-be preparing for her little one to come home, for a mom on the go preparing food for her family or even preparation for a family reunion coming up (since summer is around the corner!).

Baby it's cold outside! A day's worth of yummy foods while staying cozy inside.

Whenever it is frigid outside I love to make foods that comfort the soul. Since I've been pregnant (6 months!) I have craved pancakes...in all varieties. And as much as I'd like to go out to eat every morning...our baby budget doesn't quite allow that. So I've given making them myself a go.

This particular morning I looked in my fridge and had fresh raspberries, left over sour cream and honey. I decided to be brave and use all of these ingredients in my pancakes.

Raspberry Sour Cream Pancakes with Orange Blossom Honey
Ingredients:
1 1/2 cups flour
3 Tbsp sugar
2 tsp baking powder
1 1/2 tsp salt
1/2 cup sour cream
3/4 cup whole milk (or half n half/heavy cream)
2 eggs
1 tsp vanilla
1 tsp freshly grated lemon zest
1 cup of fresh raspberries
honey (or syrup)



Whisk together the dry ingredients in one bowl. In a separate bowl whisk together the rest of the ingredients. Add wet ingredients to dry ingredients and mix until combined.

Melt a tablespoon of butter (or olive oil) into your pan on medium-high heat. Ladle about 1/3 cup of batter into the pan. You should be able to make about three at a time, or depending on the size of pancakes you prefer. Cook until the edges start to bubble and brown, then flip. Cook for another two minutes and your pancakes should be ready to go!

I've been topping my pancakes with honey lately, so much healthier and quite delicious. This Saturday morning I actually had a fancy honey left over from Thanksgiving...orange blossom honey. It was divine on my pancakes. Plus the sour cream makes the batter incredibly fluffy. Hope you enjoy!

The next recipe is a snack fit for a queen by the roaring fire, friends gathered around the firepit outside or a couple cuddled on the couch. An avant-garde cheese plate.

Classique assiette de fromage (Classic Cheese Plate)
Ingredients:
1 bunch of red grapes
1 bunch of green grapes
1 bunch of purple grapes
a handful of fresh or dried figs
2-3 different kinds of cheese
honey
1 pear
1 apple
crackers

You really can put anything on your cheese plate. It just depends on what you prefer to snack on. I am in love with cheese. So I chose a smoked gouda and a Havarti cheese for my plate. I sliced these cheeses up and placed them on a pretty glass cake stand as my plate. Then I sliced my pear, apple and figs and placed them on the plate. Next was washing and placing the grapes in bunches on the plate, along with the crackers of your choice. The last addition was to ladle a bit of honey near the figs onto your cheese plate. You can use any kind of honey, to make this a little more special try a blossom honey, mine was an orange blossom honey and it was superb. Then serve! Trust me, this snack will be gone in no time.

My next recipe to share on a cold, blustery day would be my warm orange zest biscuits with a variety of toppings and a cup of tea.

Orange Zest Biscuits
Ingredients:
2 cups flour
2 Tbsp sugar
2 tsp baking powder
1 tsp salt
1/4 tsp baking soda
2 Tbsp cold cubed butter
2 Tbsp cold pieces of cream cheese
1 Tbsp orange zest
1 cup whole milk (or heavy cream)

Preheat oven to 400 degrees. In a large bowl combine dry ingredients. Add cold butter, cream cheese and zest, use fork to combine. Should turn into small pea sized crumbles. Add milk and mix until combined. Make a ball of the dough and flatten, wrap in plastic wrap and let this sit in the fridge for about 15 minutes. After the dough has set, flour your surface and roll out the dough with your rolling pin (or take the easy way and lightly push it out with your hands) make as thin as you prefer. Then use your biscuit cutters or a simple cup and cut out your biscuits. Place on a baking sheet lined with aluminum or parchment paper. Bake for 10 minutes and you'll pretty much want to eat these right away. To serve I set out pumpkin butter, apple butter, sour cherry preserves and creamed honey. You can top with anything you like or even simply butter. Out of all these options...my favorite was the pumpkin butter...but creamed honey topped with sour cherry preserves came in as a close second. Pour a hot cup of tea or coffee and se faire plaisir! (Enjoy yourself!)

My last recipe for the chilly day would be my pumpkin chocolate cake topped with slivered almonds. For some reason baking is one of the best things I like to do when it's cold or when I'm stuck inside. Hence the yummy cake!

Pumpkin-Chocolate Cake
Ingredients:
3 cups flour
1 1/2 tsp baking soda
1/2 tsp salt
3/4 cup butter, softened
2 cups sugar
3 large eggs
1 Tbsp vanilla
1 (15 oz) can pumpkin puree
1/4 cup vegetable oil
1 cup whole milk
1/2 cup slivered almonds

Preheat oven to 300 degrees. Grease two 8 inch round pans. In a medium bowl mix in flour, baking soda and salt. In a standing mixer/large bowl, cream butter and sugar until light and fluffy. Beat in eggs, one at a time, then stir in vanilla, pumpkin and vegetable oil. Slowly add in the flour mixture and then slowly add in the milk. Divide batter evenly into pans. Bake 35-40 minutes or until a knife comes out clean when inserted in the center. Make or grab your frosting. Don't be too disappointed, but I didn't make my frosting this time. (I'm still perfecting my baking skills.) I used chocolate frosting and to fancy up the cake a bit I used slivered almonds for the top. Once the cake was cool, I frosted and topped with the almonds. And voila! Enjoy while the cake is still warm.

Mountain Getaway


Now that my husband and I live in Colorado, trips to the mountains every so often are essential. This time my husband was bogged down with work so I decided to go all on my own. BUT that didn't mean I had to throw all my meals by the wayside. If this was truly my personal getaway for some solace, I deserved some well-thought out, delicious, soul-warming meals.

October is a beautiful time to visit the mountains, the Aspens are gorgeous hues of yellow, gold and maroon but it is quite cold so you definitely want meals that make you feel comforted.

I decided to make my breakfast for the week before I left:

Uber-Healthy Banana Bread
2/3 cup butter (softened)
1 cup sugar
1 egg
3 bananas
1/4 cup toasted sesame seeds
3 Tbsp chia seeds
1 cup oats
1 1/2 cups flour
1 tsp baking soda
1 tsp salt

Preheat oven to 350 degrees. Cream butter and sugar together, add the egg into your mixer. Toast sesame seeds for depth of flavor. I always freeze my bananas once they start to brown, I throw them in the microwave for a minute or so to thaw and then they are perfect for banana bread. Add them to your mixer, once combined start with dry ingredients. Add in flour a 1/4 cup at a time, then baking soda and salt. Next add your oats and seeds. Once the batter is combined pour into a loaf pan. I use silicone loaf pans and they are fantastic, no sticking! Bake for one hour and let cool for 10 minutes before taking out of pan.

I love banana bread, my mom's recipe is delicious but sometimes I like to change it up. For this recipe I added some super healthy ingredients to help keep my energy up while I was out and about in the mountains. If you have little ones, it's super easy to hide healthy ingredients when baking. Eat while warm and you will be in heaven!



French Onion Soup
2 large onions (sliced thin)
1 Tbsp butter
1 Tbsp vegetable oil
1 carton of beef stock
1/2 cup red wine
Gruyere cheese
loaf of crusty bread

Heat your butter and oil in a medium sized sauce pan. Add your sliced onions and fold into the butter mixture so each onion slice is coated. Let the onions carmelize and cook down for 10-15 minutes or so. While enjoying your getaway with a glass of wine, pour about 1/2 cup into the onions. Let alcohol cook off and dry the onions, about 5 minutes. If you have flour on hand (I
 didn't) sprinkle a little to coat the onions, this

helps the soup become thick. Next add in the beef stock and let reduce down for another 15 minutes. While soup is cooking down, slice a few slices of bread and sprinkle Gruyere cheese on top, put them in the broiler to get all bubbly. Once soup is ready, ladel into bowls, place a slice of bread topped with the bubbly Gruyere cheese and dive in. This soup warmed up my frigid soul right away while sitting by the fire, gazing out the window at gorgeous snow-capped mountains.

Chocolate-Raspberry Tiramisu
6 oz container of marscapone cheese
2/3 cup heavy cream
1/2 cup sugar
2 1/2 cups espresso (warm)
2 packages of Lady Finger cookies
chocolate shavings (garnish)
2 packages of raspberries

Chocolate Zabagilone
2 Tbsp heavy cream
1/4 cup dark chocolate chips
4 large egg yolks
1/3 cup sugar
1/4 cup prune juice (or Marsala)
pinch of salt

Scoop your marscapone cheese out of the container into a large bowl, set aside so it can reach room temperature. Meanwhile, beat the heavy cream and 1/4 cup sugar in a standing mixer until soft peaks start to form. Fold this whipped cream into the marscapone cheese, set aside while you make your chocolate zabagilone (mousse mixture).

Add two tablespoons of cream and chocolate bits to a small saucepan. Cook over medium heat, stirring often until smooth and melted. Set aside and keep warm.  Whisk the egg yolks together, add the prune juice, sugar and salt until well blended in a glass bowl. Set bowl over a saucepan of simmering water, do not allow the bottom of the bowl to touch the water. Whisk the egg mixture over the simmering water until thick and creamy, about 4 minutes. Remove from heat, fold egg mixture into chocolate mixture. Cove and chill in refrigerator for at least 30 minutes.

Once chocolate mousse is chilled, fold into the marscapone mixture. Then chill this mousse completely, about another 30 minutes. Meanwhile brew your espresso and pour into a bowl, whisk remaining 1/4 cup of sugar until dissolved. Find your glass trifle container and dip your lady finger cookies into the sugary espresso mixture, place on the bottom of the trifle. Be quick when dipping the cookies because they are fragile and will fall apart fast. Once mousse is cooled, you will spoon the mixture over the first layer of cookies, top with a layer of raspberries and chocolate shavings then repeat until you've reached the top of the trifle. End with a layer of raspberries and chocolate shavings. Let cool for about six hours before serving so the layers can marry together.

You can also put this in a loaf pan if you don't have a trifle, then when you serve you'll place the solidified tiramisu on a serving platter (what I did in the picture above). My company loved this dessert so much I am thrilled to share it with my family for Christmas!

When you spend a getaway on your own, it is a perfect time to make your favorite recipes or try out new ones you can potentially share with company. As much as I love writing, it's time for me to spend some time outdoors in the gorgeous mountain air!

Ladies Night

Now that I have moved to another state, any time I am home, I love having a ladies night. Ladies nights are not to be stressful or overthought. They should be simple, thoughtful, delicious and fun.

This particular night I decided to do a few savory and a few sweet items. I didn't want to spend all day cooking so I made sure to include at least one dish that only needed to be assembled.


Carmelized Onion-Tomato Tarts
2 sheets of puff pastry
1 package of cherry tomatoes
1 red onion
block of feta cheese
2 green onions
olive oil
butter
salt
pepper

First thing you need to do is caramelize your onions, slice them thin and add them into a heated skillet with a mixture of olive oil and butter. While your onions are cooking, cut out little biscuit or flower-like rounds with a cookie cutter and place them on a baking sheet. Then slice your cherry tomatoes in half, crumble your feta and slice your green onions in really small bits.

Once the onions are carmelized you are ready to start compiling your tarts. Add onions first then top with tomatoes, bake for 15 minutes at 350 degrees. Once the tarts come out add your feta, green onion, olive oil, salt and pepper. These are ready to serve!

Salami, Cheese & Cucumber

1 cucumber
crackers

This was my dish to assemble, thinly slice the different types of cheese (whichever your favorites are) I chose cheddar, colby jack, jalapeno jack and swiss. Peel your cucumber half way where you have an even amount of dark lines from the skin and light green lines from the inner cucumber meat. Slice the cucumber and then place a cucumber, slice of cheese, slice of salami in long lines on your platter. Place assorted crackers on one end for guests to serve themselves.

Almond-Orange Mini Cakes
1 cup of ground almonds
1/4 cup flour
1 large orange
3 eggs
1 cup confectioners' sugar
1 tsp baking powder
1/2 cup marmalade

Put your orange in a huge bowl covered in water in the microwave for 25 minutes (or heat over the stove in a saucepan for an hour). While the orange is "heating up" grind your almonds, set aside. Beat your eggs with the sugar until pale and thick. Fold in the flour, baking powder, almonds and finally the orange- when the orange is done, let cool and cut into quarters, remove seeds then add to food processor. Puree and pour into mini cupcake pan (make sure the cupcake pan is greased). Bake for 30 minutes and check by dipping a toothpick inside, let bake for a few more minutes if the toothpick comes out unclean.

While the cakes are baking, melt the marmalade, once cakes are baked let cool and brush marmalade on top to serve.

Peanut Butter Cookies with a Glazed Walnut 
1/2 cup sugar
1/2 cup brown sugar
1/2 cup peanut butter
1 tsp vanilla
1/2 tsp baking soda
1/2 tsp salt
1 1/2 cups flour
1/2 cup butter
1 egg
walnuts (one for each cookie)
agave nectar/brown sugar

Cream sugars and butter together, beat in egg. Mix peanut butter and vanilla until smooth and creamy. Stir in salt, baking soda and flour until well combined. Roll dough into one inch balls and place on baking sheet. Next pour a dollop of agave nectar into a skillet with about a few tablespoons of brown sugar, heat up until melted and add in walnuts. Once walnuts are glazed place one on each cookie, then bake for 8 minutes at 350. Let cool then serve.





 Girls night should be full of laughter, memories and delicious food. If you create a spread like this your girls will definitely want to come back for more! For drinks serve a red and white wine to compliment the food.

Concert in the Park

After moving to Colorado I took a break from unpacking and had a fun evening out with my family. We sat on a huge hill covered in soft grass which overlooked a stage with a fun, 40s style band playing swing music. With a sigh of relief and oncoming relaxation I opened my picnic bag and pulled out the goodies I prepared for this special event.

A few hours earlier I created the following: summer salad, cheese wheels, strawberry cheese and crackers plus date cakes and chocolate puffs.

Summer Salad
the rest of the box of campanelle pasta
bag of frozen brussel sprouts (or fresh)
two strips of bacon
1/2 red onion
canellini beans
one fresh tomato
red pepper flakes
salt
pepper
smoked paprika

Cook the rest of your campanelle pasta, while the water is boiling cook your bacon in a cast iron skillet.  Once the water is boiling add your pasta. Once the bacon is mostly crisp, remove and lay on a few paper towels to de-grease. Pour your brussel sprouts into the bacon grease to saute, add in half the onion, some salt and pepper.

Once the pasta is al dente, pour in a colander and put in a large bowl to cool. Crumble the strips of bacon into the bowl of pasta, dice up the tomato and add into the bowl as well. Once the brussel sprouts are done, let cool on a cutting board. Dice up the rest of the onion and add to salad. Slice up brussel sprouts into thin slices and add in spices. Mix this salad up and let the flavors merry while cooling in the fridge. After an hour or so of cooling the summer salad should be ready to dive in to.

Cheese Wheels
1/2 puff pastry
white cheddar
blue cheese (or any cheeses you have)
cherry tomatoes
capers

You can really use anything for these cheese wheels, any kinds of cheese, veggies or meat. I happened to have a white cheddar blue marbled cheese, leftover cherry tomatoes and capers. So I rolled out my puff pastry and layered my cheese, tomatoes and capers, then I rolled up the puff pastry like a jelly roll. I used an extra sharp knife to slice half inch pieces and then set them on a greased pan. I baked them for about 15 minutes (as soon as the puff pastry is golden).

Strawberry Cheese and Crackers
5 sliced strawberries
marbled white cheddar blue cheese (or any cheese)
wheat thins (any crackers)

This is very simple, but since I was using a mixed blue cheese, strawberries added a depth of sweetness to the harsh tones of blue cheese, not to mention this made the simple snack that much more summer.








Almond- Date Cakes with a Honey-Chocolate Drizzle
12 dates
1 cups of almonds
1 cup of chocolate covered almonds
1 tsp cinnamon
1/2 cup sugar
4 eggs separated
2 tsp lemon zest
1 tsp vanilla
pinch of sea salt

Drizzle
1/2 cup honey
melted chopped chocolate covered almonds

This was such a hit at the concert...anyone will love it! Put the almonds, chocolate covered almonds, cinnamon and 1/4 cup of the sugar into the food processor, process til ground but not a powder. Whisk egg yolks, lemon zest and vanilla together in a separate bowl. Beat egg whites until foamy, add in remaining sugar (tablespoon at a time), you want soft peaks to form. Fold in yolk mixture, add dates then fold in the almond mixture. Pour into a cupcake pan, I use silicone cupcake holders that way I can continue reusing them. Bake at 350 degrees for 20-25 minutes.

For the drizzle, pour honey into a bowl add the chopped chocolate covered almonds and melt in the microwave (about 30-45 seconds- don't overcook). Drizzle this over the cupcakes and top with a few sunflower seeds. Then enjoy!

Chocolate Puffs
1/2 puff pastry
chocolate candies
honey

This dessert is super easy and definitely a kid pleaser! Take a snack size chocolate candy and take a small square of puff pastry, drizzle a bit of honey and wrap all the sides around the chocolate. I used a kit kat type candy but snickers are good to use or anything really. Bake at 350 degrees until the puff pastry is golden, about 15 minutes.

Create all these awesome snacks and you are sure to have smiling faces, enjoying some live music outside on a summer night.

Rustic Campanelle

I have been on a hiatus as my husband and I made our move west to Colorado. We are very excited to be immersed into such a nature-rich atmosphere. We can't wait to explore and I can't wait to incorporate all of my organic, mountain-living knowledge into my cooking!

The first meal I made in our new home was rustic campanelle pasta with some leftovers that I had from our family's house.

Rustic Campanelle Pasta


1/2 box of campanelle pasta (looks like a cork screw with crinkled edges)
1 package of frozen peas
2 portabella mushrooms
1/2 red onion
chicken stock
marinara sauce
red pepper flakes
parmesan cheese
salt
pepper
olive oil
loaf of homemade bread (or rustic bread)


Now I already had made the peas and mushrooms into a veggie saute for a family meal the night before so I used that to add a bit more texture, nutrients and flavor to my pasta dish. So if you have any veggies side dishes that you don't know what to do with, use them in a pasta dish! Or you can add in the peas and mushrooms from a fresh start.

Firstly heat your chicken stock up to a boil. While the chicken stock is heating up heat up your saute pan with olive oil and crisp up the onions. When the onions turn translucent, add in the mushrooms and peas. When the stock comes to a boil add a drop of olive oil and your pasta. Then let both items cook, your pasta should come to al dente in about 10 minutes (don't overcook or it gets mushy).

Then once the pasta is done, drain in a colander (you can always save the liquid for the next pasta dish!) Pour the pasta into a large serving bowl, add pea concoction, add in red pepper flakes, marinara sauce, salt, pepper and parmesan. Give the pasta a good toss and this rustic, half-leftovers meal is ready for chowing down. My husband loved it and I am sure your family and friends will too! Oh don't forget to break off a big piece of bread and dip that into your sauce....yum!

“Laugh as much as you breathe and love as long as you live.”

Valentines Day is right around the corner...There are some great, easy ways to show your loved one how special they are. You can focus on a sweetheart breakfast, picnic lunch, romantic dinner or sexy little surprises throughout the day.

They always say the key to a man's heart is through his stomach...so my plan was to hone in on breakfast because it is my husband's favorite meal. I wanted to start his day off by showing him how much I love him by creating a fantastic, homemade breakfast in bed.

First I started by creating a potato hash.

Fingerling Potato Hash
6 fingerling potatoes
1/4 yellow onion
2 baby portabella mushrooms
1 Tbsp butter
1 tsp salt

Heat your pan on medium heat with butter, add diced onions, potatoes and mushrooms. Continually stir and add salt. These will cook for about 30 minutes.

Homemade Tortillas
3 cups flour
1/3 cup corn oil
1 cup warm water
1 tsp salt

While your potato hash is cooking make some homemade tortillas...which are WAY better than store bought tortillas. Mix the flour and oil together with a fork til the mixture becomes nice and crumbly. Then add in the salt and warm water, spoonful at a time until the mix morphs into a dough. Knead the dough with your hands for three minutes to smooth it out. Then place in a bowl, cover with plastic wrap and let sit for 30 minutes at room temperature. Once the 30 minutes are up, pinch off golf ball size pieces of the dough and roll out on a floured surface. Roll out the dough to a thin, 8 inch disc then place on a saute pan on medium heat and let cook for about 30 seconds then flip. The tortilla cooks fast and will develop little brown spots, to show it is done. This amount of dough should create 10-12 tortillas. After your tortillas are done heat up your black beans and start on cooking the eggs.

Sweetheart Breakfast Tacos
4 eggs
1 Tbsp butter
1 tsp salt
heart cookie cutter
1 cup black beans
1/2 cup shredded colby cheese
1/2 cup roasted salsa
potato hash
homemade tortillas

You can use the same pan that your potato hash is cooking in, push the hash to one side, grease the open side with butter, put your cookie cutter down and crack your egg into the cookie cutter. The egg will solidify inside the cookie cutter creating a heart shape. Cover your egg/hash with a lid until the egg is cooked to your liking. We prefer over-medium eggs, make sure the pan is on medium-low heat. The eggs should cook about 2-3 minutes per egg. When the eggs are done start to plate your breakfast tacos. Put your tortilla down first, then potato hash, black beans, shredded cheese, heart-eggs and salsa.

Serve this up and your honey will cover you with kisses...after they escape their food coma of course :)

"When the lasagna content in my body gets low, I get mean." - Garfield

Garfield is one correct feline...who doesn't like his empty fuel gauge for lasagan to deplete. In freezing, winter days...when I need that warm, comfort, cheesy, filling food...I must agree that I feel the exact same way.

Like I had mentioned in my earlier posts, I gave up meat for February...which means I am only eating any kind of seafood and trying to concentrate on filling my diet with more vegetables, fruits and whole grains, etc. Sometimes humans put too much focus on meat...yes protein is a vital source for our bodies but people have been overdoing the amount of meat they are putting into their bodies. Red meat is especially a source of protein that should be carefully eaten, red meat is an excellent source of iron and protein but you want to be informed of where this meat is coming from. Stay away from ground meat unless you know it is organic, the best red meats are the leaner ones like filets or strips..the less fat, the better for you. I know guys that means try not to eat so many ribeyes, even though they taste delicious with all that fat rendering into your meat.

Also be wary of other sources of meat, pork, chicken, etc do your homework and find the best meat for your family. Shopping at a local farmer's market is a great way to find healthy, hormone-free meat, also shopping in the organic isle is helpful as well. Unfortunately, FDA does not require that all manufacturers for meat and several other foods tell us exactly what is going into our food. Hopefully this will change, til then the best you can do is shop organically and do your research.

Getting back to my lasagna post... last night I was cold, hungry and craving some cheesy goodness. I decided to whip up some lasagna. Since I have given up meat, I incorporated a few veggies: spinach, eggplant, onions, red peppers, green peppers and yellow peppers.

Lasagna Primavera
1/2 box of whole wheat lasagna noodles
1/2 eggplant
1 red bell pepper
1 green bell pepper
1 yellow bell pepper
1/2 large yellow onion
1 jar of tomato basil pasta sauce
2 cloves garlic
bechamel sauce (see recipe below)
1/2 cup havarti jalapeno cheese (can be mozzarella)
1/4 cup colby jack cheese (any cheese you want)
1/3 cup asiago cheese (again any parmesan or romano cheese)
1 can pumpkin
1 egg
1 cup chopped spinach
salt
pepper

Bechamel Sauce
4 Tbsp flour
5 Tbsp butter
1 bay leaf
3 1/2 cups warm milk
1/2 tsp nutmeg

Start off your lasagna by chopping up your onions, peppers and garlic, saute them on medium heat with olive oil. Meanwhile, slice your egg plant and saute them in a separate pan until they are tender. Start boiling your water for your lasagna noodles. Then in another sauce pan, start melting your butter  with the bay leaf for the bechamel sauce...once the butter has melted completey spoon in a tablespoon at a time of the flour, whisk mixture together. Once all the flour has been added to the butter add a cup at a time of the warm milk, continue to whisk. Bring the sauce to boil then lower heat, as you continually whisk. Eventually the sauce will thicken up, add the nutmeg and set sauce aside until ready to use.

Once the water is boiling, add lasagna noodles with a drizzle of olive oil to avoid the noodles sticking together. Once the onions and peppers are tender, add the pasta sauce. In another separate bowl empty can of pumpkin and crack an egg inside, stir mixture together. Slice/grate your cheeses (I used what was in the fridge) and be ready to assemble your lasagna. Use an 9x11 pan and put pasta sauce down first, then top with lasagna noodles, pumpkin puree, bechamel sauce, eggplant, spinach, cheese and then repeat until you've filled your casserole dish to the top. Finish with tomato sauce and cheese. Bake at 350 degrees for 30-35 minutes until all the layers have merried together. Let the lasagna cool for 10 minutes before serving.

This recipe will be perfect for feeding a large group of people, for any family gathering, holiday or just a cold, wintery day. This lasagna is loaded with healthy carbohydrates, fiber, potassium, calcium, iron and Vitamin E.

"All happiness depends on a leisurely breakfast." - John Gunther

I passionately agree with Mr. John Gunther... every week I look forward to my weekend mornings so I can wake up slow in my pillowy duvet, slink out of bed and make coffee...go back to bed, waiting for my coffee. Then finally when I muster up enough willpower I meander into the kitchen to chef up some le petit dejeuner.

There are many different paths you could take while creating a breakfast meal. You could go savory, you could go sweet, you could go with eggs, pancakes, french toast, lox in bagels...there are about a million scrumptious options! I will show you a few of the diverse paths I have trodded down during the morning hours of the day.

Cherry-Blueberry Granola Bars
1 cup uncooked oats (old fashioned)
1 cup flour
1 cup granola (any kind you like- I used vanilla-almond)
1/2 cup agave nectar
1/4 cup brown sugar
1 cup sliced almonds
2 tablespoons of melted butter
1/3 cup blueberry preserves (the good stuff)
1/4 cup cherry preserves (the good stuff)

I've always wanted to make my own granola bars versus buying them at the store...most of you think, "Yeah if I worked at home." Well you can still make your own granola bars and be busy. These don't take long and are WAY more tasty than any store bought granola bar. Start by pouring 3/4 cup of the oats, granola and flour together in a bowl, mix together and add brown sugar, almonds, agave and butter. Fold everything together so it is all evenly mixed. Pour into a 9x9 inch greased pan. Then spread your preserves over the top (stay away from the edge so they don't stick to the pan) and top with the remaining oats. Bake for 10-12 minutes. Serve after about two minutse of cooling so you can eat them while they're hot...trust me these suckers are to die for! And who knew they could be so healthy?? Packed with healthy carbs, protein and healthy sugars this is a great option to begin your day on the right path.

Healthy Bacon-Herb Frittata

6 eggs
fresh parsley
fresh cilantro
fresh rosemary
2 chopped bacon wrapped dates stuffed with goat cheese (leftovers!)
1/4 cup colby jack cheese
2 slices of canadian bacon
1/4 yellow onion
4 mushrooms (any kind you prefer, I used button)
salt
pepper
olive oil

This option is magnificently healthy and great for anyone trying to help benefit their cholesterol levels. Many people are afraid of making frittatas thinking they will taste too healthy (I can vouch for that one) or they are too difficult. But this is one of the easiest egg dishes known to man. First you wan to fetch your fresh herbs and give them a fine chop. Save a bit of the cilantro for a garnish and put the rest in a bowl. Slice up your onion and mushrooms, add them to a cast-iron skillet. After a few minutes add in your canadian bacon and bacon wrapped dates. Once carmelized, turn the heat to medium-low. Crack your eggs into the bowl with the herbs. Give a good whisk, add salt and pepper and pour egg mixture into the skillet. Do not scramble. Let the bottom cook over the stove for about 6 minutes. Once the bottom has settled then finish top with cheese and finish in the oven at 350 degrees for about 10-12 minutes. The frittata will puff up, once the eggs are cooked you are ready to serve. Remember the skillet is very HOT!


These two dishes are perfect to pair together! A little sweet with the fresh, warm granola bars and a little savory with your hot, gooey egg frittata. Your family, friends and neighbors will all be begging for the recipe!

Strawberry-Banana Pancakes
1 cup flour
2 Tbsp sugar
1 1/4 tsp  baking powder
1/4 tsp baking soda
1/4 tsp salt
1 egg
1 cup milk (you can use any kind, whole, skim or buttermilk)
2 Tbsps melted butter
1/2 cup sliced bananas (fresh)
1/2 cup sliced strawberries (fresh)

Mix the dry ingredients together in one bowl and the wet ingredients together in a separate bowl. Once both are well mixed, combine. You can either add fruit directly into batter or you can add add fruit once you pour mix into the skillet, I did the latter. Once you have a semi-thick batter use a 1/3 measuring cup to scoop the batter into your hot skillet. Pour in a bit of olive oil first, once your batter is poured drop a few slices of banans and strawberries right on top of the wet pancake. Once the pancake starts to bubble up and the sides are cooked you can flip. Continue til all of the batter is used.

Chive 'n Cheese Scrambled Eggs
6 eggs
1/2 cup colby jack cheese
1/4 cup freshly chopped chives
salt
pepper
olive oil
2 Tbsp water

Chop up your chives and shred your cheese, add to a medium sized bowl. Crack your eggs directly into the bowl. Add a pinch of salt and pepper. Start to whisk your eggs together for scrambled eggs. Add in the water and continue to whisk. Grease your hot skillet with olive oil and pour into pan. Move the egg mixture around until it starts to solidify. Continue to "scramble" the eggs until they are fluffy and cooked but not overcooked (you don't want your eggs to brown). Serve with a bit of cheese and chives on top. Fabulous meal full of healthy proteins, calcium and carbohydrates.



All of these combinations of breakfasts are fantastic options to help start off your day right. Sweet and savory are a classic combination for breakfast and will leave any appetite satisfied. So whip out your apron and start a scramblin'!

Start your Winter day off right

In order to start your cold, blustery day off correctly a fulfilling breakfast is much needed. Eggs are a fantastic way to fill you up without a lot of calories or fat. Enjoy this simple yet mouth watering breakfast recipe.

Omelete

6 eggs
2 Tbsp milk
salt
pepper
3 English muffins
ground turkey
fresh berries
green onion
shiitake mushrooms





Slice disks out of the ground turkey and cook until juicy and slightly crisp. Chop up your green onions and shiitake mushrooms, add them to a pan on medium-low heat. Scramble the six eggs, whisk in milk, salt and pepper. Toast up the English muffins. Remove the onion-mushroom mixture and pour in 1/3 of the mixture, once the eggs start to solidifiy flip and add in onion-mushroom mixture plus shredded cheese. Flip one half over to create an omelette, leave for one minute then remove from heat.

Plate the omelete top with cheese and a few green onion slices with a side of turkey sausage, English muffins and berries. This meal will jumpstart your metabolism and give you energy to conquer the day!

Acorn Squash Soup

Nothing is better than a hot bowl of comforting soup when the winds are chilly and the clouds unleash rain across the city.

I stumbled upon this recipe as I looked in my fridge and found an acorn squash, the only thing I had made before with this gorgeous ghourd was chutney but this time I wanted to make something good for the soul.

Acorn Squash Soup with Fresh Sage

1 acorn squash/2 people
1 yellow onion
1 leek
1 bunch of fresh sage
1 carton of chicken stock
1/4 cup freshly grated parmesan cheese
2 garlic cloves
3 Tbs olive oil
1/2 cup milk (or heavy cream)
salt
pepper



I started as you would with any squash, you cut them in half de-seed them and place on a baking sheet. Pre-heat your oven to 400 degrees. While the oven is heating up, slice up some onions, garlic, bits of fresh sage and leeks place those inside of the hole of the squash and drizzle with olive oil. Place the squash in the oven for one hour to soften and bake.

While the squash is baking light your Dutch oven or soup pot on low heat, add olive oil and the rest of the onion, leeks, a few sage leaves and garlic. When they become golden (30 minutes) add chicken stock, salt and pepper. Once the squash is done, remove from oven and let cool for 10 minutes. Once the squash are cooled pour the contents inside the squash into the pot. Strip off the squash skin, chop up into inch cubes and add to the pot. Raise the pot's temperature to medium heat and stir. After 15 minutes use your hand emulsion blender to blend the squash soup together. Be careful not to raise the blender above the soup, blend for 10 minutes until creamy and smooth. Then add your milk/heavy cream. Let the soup finish for five minutes then you are ready to serve.

Once you pour the incredible soup into your serving bowls, grate fresh parmesan cheese on top, sprinkle with salt and pepper and garnish with fresh sage leaves. This soup will knock your snuggie right off, it is down right delicious! Perfect for entertaining or as a quiet Sunday meal.

Wowza White Chicken Chili

Now that the fall months are among us and colder weather has started to prance its way into the day...it is time for comforting, warm meals.

One of my family's absolute favorites is white chicken chili...for some reason I've never been a huge fan of regular ole joe red bean and beef chili. Maybe it's too filling, maybe it's too heavy but this particular type of chili is not only scrumptious but it is packed with healthy nutrients and not too heavy.

White Chicken Chili

4 chicken breasts (or thigh meat)
6 cans of Great Northern beans
1 package of chicken stock
3 celery stocks
2 medium yellow onions
1 tsp salt
1 tsp pepper
1/2 tsp cumin
1/2 tsp paprika
1 tsp oregano
1 bunch of cilantro
avocado
1/2 cup monterrey jack cheese



Grab your Dutch oven or stock pot and add 1 Tbsp of olive oil on medium heat, when the pot starts to sizzle add the chopped onion and chopped celery. Once the onion and celery turn golden add the chicken (cut into inch size pieces). After a few minutes add the beans and chicken stock. Stir and add the spices. After about 20 minutes taste and add more spices if necessary. Cook another 10 minutes then the magnificent chili is ready to serve!

Once you add the chili to the serving bowls, add sprigs of cilantro, chopped avocado and shredded Monterrey Jack cheese then take a bite and savor the explosion of fantastic flavors!

Southern Breakfast with a Flair

Every weekend I wake up slowly without an alarm and dream about what breakfast might be. This particluar morning I decided to go with my Southern roots, an egg sandwich with cheesy grits and homemade bread.

Firstly, I started off by cooking my grits, I added water to a sauce pan and once it came to boil I added grits, salt and waited for them to absorb. While that was cooking I took two links of chicken, feta and spinach sausage out of the casing and made a patty then I put that onto a bit of olive oil to cook. In the meantime the grits had absorbed the water, one of the best things about grits is it is so versatile. You can pretty much add anything to them and the flavors will blend in. I decided to make cheesy grits and grated up some colby jack cheese and stirred that into my grits.



Next I flipped my sausage patties and added two thick slices of homemade white bread to the pan to get a nice crispiness to it. Once the cheese melted into the grits I added some salt and pepper to taste and put them on low heat to keep warm. Once the patties were done and bread was crisp, I removed them from the flame and cracked a few eggs into the pan. After my eggs were ready to go I plated my bread, sausage patty then egg on top with my cheesy grits on the side. Poured a mimosa & ta da!

Sassy Southwestern Beef Tacos

Lately, schedules in our house have taken a turn into c-r-a-z-y. My husband is a football coach and I am a teacher...our school year is about to start and two-a-days are in full throttle, for football season. Finding time to make healthy, fast meals out of leftovers, is crucial this time of year. The other night I had put some beef chuck into the fridge, from the freezer to thaw. I had leftover corn-on-the-cob, white corn tortillas, veggies and canned black beans.

I decided to marinate the chuck in a simple, zesty marinade, sear it on the grill pan, roast the corn and saute the veggies. The assembly would transform the ingredients to Southwestern beef tacos with a side of corn and black beans.

Zesty Marinade

2 Tbsp Worcestireshire
1 Tbsp brown sugar
1/2 tsp red cayenne pepper
1/2 tsp chili pepper
1 tsp italian seasoning

Once your chuck is thawed, rub this marinade all over and let sit in the fridge for at least 30 minutes. Afterwards, add a bit of olive oil on the grill pan and place the chuck to grasp beautiful sear marks. Cook for 15-20 minutes (depending on how you prefer your beef to be cooked.)



Roasted Parmesan Corn

Take the corn on the cob, drizzle with olive oil, parmesan, salt and pepper. Roast in the oven at 400 degrees for 30 minutes.

Sauteed Onions and Mushrooms

Slice up 1/2 batch of mushrooms and 1/2 an onion. Heat a saute pan with olive oil, add veggies, salt and pepper then cook on medium-low heat for 20 minutes.

Black Beans

Place the black beans in the sauce pan with a bit of salt and pepper and heat on low.

Assemble by frying up your tortillas in a touch of olive oil, slice your beef into strips, layer on your sauteed veggies, grate your cheddar or colby jack cheese. Ladle your beans into a side dish, top with a bit of grated cheese and green onion. Place corn on the plate and your mouth should be watering.

Sunday Funday Burgers and Mac n Cheese

What Sunday wouldn't be perfect without a juicy burger and creamy, cheesy mac n cheese? We are pretty healthy in our house but every so often we crave a big burger and some smack your lips macaroni and cheese. This can be easy to throw together from leftovers!


Bacon-Monterrey Jack Burger with Sauteed Onions and Mushrooms

1 lb of ground beef (or turkey)
1/2 cup monterrey jack cheese (shredded)
1/2 cup crisp, crumbled bacon
5 mushrooms sliced
1/4 onion sliced
salt
pepper
whole wheat buns (or bread)

Saute mushrooms and onions on medium-high heat with olive oil. Meanwhile, pound out your ground beef add bacon and cheese, then create patties about 1/4 lb (about an inch thick). Sprinkle with salt and pepper. Heat up grill pan and grill burgers for 5 min per side or less depending on how you prefer your burgers to be cooked. Place buns or bread slices on the grill pan to toast, pile on your sauteed veggies and let the devouring begin!



Creamy Macaroni and Cheese

1 box of rotini pasta (or elbow, penne)
2 cups of cheese (I used a combination of colby jack, queso fresco, habanero and cream cheese)
1 cup of milk
3 Tbsp butter
salt
pepper

Heat water on stove til boiling, sprinkle with olive oil and add pasta. Cook til al dente then add cheese, milk, butter, salt and pepper (preferably in a dutch oven or large sauce pan). Cover and let sit for 2 minutes to melt. Stir, cover and let sit for another 2 minutes over low heat. Assess and add more milk if it isn't creamy enough. Plate with your fantastic burger and indulge in your Sunday Funday meal!

Restaurant Style Dinner

After a girl's night with my great friend Amanda Kordes, an aspiring chef, who had gone to Culinary School in Kentucky, I learned a few new tricks to help take my meals up to the next level. This particular night for dinner I had flank steak, leftover veggies, arborio rice (Italian-Style risotto rice), rye bread, leftover enchilada sauce, queso fresco and swiss cheese.With all of that I made this restaurant-worthy dish:

Savory Spice-Crusted Flank Steak

2 lbs flank steak
1 clove chopped garlic
1 Tbs flour
1 tsp paprika
pinch of cayenne pepper
1/2 tsp cumin
pinch salt
pinch pepper

With the flank steak, I chopped up my garlic then I sprinkled that all over my steak. Next, I combined the savory spices and flour to create a flavorful crust. I dipped the flank steak into this spice rub and made sure every inch was covered. I put my grill pan on medium-high heat, drizzled with olive oil and laid the flank steak on the grill pan. The grill pan helps create a lovely crust, grill marks and juicy flavor.

Creamy Mushroom Risotto

1 cup Arborio rice
1 1/2 cups chicken stock
olive oil
pinch salt
pinch pepper
5 button mushrooms
1 garlic clove
1/4 chopped yellow onion
1/4 cup grated swiss cheese
1/4 cup crumbled queso fresco

I begin by boiling my chicken stock then adding the risotto with a touch of olive oil, stirring occasionally. Meanwhile, I slice my mushrooms, chop my onion and chop my garlic. After about 15 minutes I add the onion, mushroom and garlic to a saute pan on medium heat. Once the risotto is soaking up the rice and beginning to fluff up, I add the mushroom mixture with a pinch of salt and pepper. I cover and turn down the heat to low.



Vegetable Ratatouille

While my steak was cooking, I decided to use my leftover veggies to create a ratatouille.

1/2 zucchini
1/2 yellow squash
3/4 cup brussel sprouts
1 can chopped tomatoes
1/2 cup okra
1/4 cup black beans
Italian seasoning

I took a bowl, poured in the chopped tomatoes with the juice, Italian seasoning and all the veggies. I combined the flavors then drizzled olive oil on a baking sheet. I lined the veggies in a pretty, colorful pattern then baked at 400 degrees for 25 minutes.

Spanish Bruschetta 

2 slices of bread (any bread will work)
leftover enchilada sauce (or marinara sauce)
1/8 cup grated swiss cheese
1/8 cup of crumbled queso fresco
pinch basil
pinch oregano
salt
pepper

I cut my bread in half and grated the cheese, then combined the cheese with the sauce mixture and sprinkled the seasoning in. I mixed that together and spooned the mixture on top of the bread, I turn on the broiler and placed the bruschetta under the broiler for 5 minutes to crisp and bubble up.

My husband and I prefer our meat medium-rare, if you want to know what temperature your meat is feel the meaty part of your palm. With no clinch of your fist that is what rare feels like, then take your thumb and touch each finger, that meaty party of your hand will firm up as you make your way down to your pinky which is well-done. I took the meat off the pan and let it rest for a few minutes on a cutting board. Meanwhile I added the cheese to the risotto and stirred that up. I checked on my veggies and took them out with the bruschetta. I sliced up the flank steak and served the steak on a bed of risotto with a side of vegetable ratatouille and Spanish bruschetta toast points.

Lunches On The Go-Go!

During the week most people think of lunch last. I'm here to help you make a fast yet healthy lunch that you can grab on the go or take to work.

Beans & Rice with Cheese

1 can of black beans
1 cup Basmati rice
1/2 cup cheddar cheese

Boil your water and add your rice with a pinch of salt. Put beans in a saucepan and heat up until they are nice and bubbly. Shred your cheddar cheese, set to the side for final topping. Once rice is done, spoon into a bowl, top with beans and finally, top with cheese. The cheese will start to melt and create a cheesy, bean goodness. This meal is stacked with protein, calcium and a healthy dose of carbs.


Grilled Italian Panini

two slices of bread
leftover veggies (cooked, from a previous meal)
sliced turkey
swiss cheese
olive oil
almonds
cookies

For this panini, my husband was on his way home for lunch and he was super hungry. I knew I had leftover zucchini, squash and onion, along with a little bit of swiss cheese, whole wheat bread and sliced turkey. I started by lightly drizzling the outside of the bread and placing on the panini press. I heated up the leftover veggies and turkey in a saute pan. Then I placed slices of cheese onto the slices of bread, added the veggies and the turkey- combined both slices and put the press on top of the sammy. After a few minutes the cheese had melted, which glued the sandwich together. I plated the sandwich with some almonds and homemade Snickerdoodles. My husband loved the panini!

Ay Mamacita! Chicken Enchiladas Suizas

Yesterday was my husband's mother's birthday, she passed away 10 years ago and would've been 57 years old. We decided we wanted to celebrate her birthday and memory by eating what she would've eaten. My husband tells me she loved hamburgers, Dr. Pepper and Mexican food...so he put me up to the challenge to make some homemade enchiladas.

After stopping by the grocery store for our necessities I got to work, if you have a dutch oven or large sauce pan grab it and follow the recipe below.

Ingredient List

3 cups water
2 cups chicken stock (always better than chicken broth)
2-3 lbs of roma tomatoes
2 jalapeno peppers
1 yellow onion
3 bone-in, skin-on chicken breasts
1/3 cup of Mexican crema (or sour cream...but Mexican crema is miles better)
1/3 cup Queso Fresca (white Mexican crumbly cheese)
12 white, corn tortillas (try to get the "homemade" kind)
2 bay leaves
3 cloves garlic
1/2 cup vegetable, canola or olive oil (for frying)
2 Tbs olive oil
1 can of black beans
salt & pepper


The first thing you want to do is put 3 cups of water, 2 cups of chicken stock, chicken breasts, bay leaves, 2 cloves of garlic (whole) , salt and pepper into your dutch oven or large sauce pan, turn it up on medium-high heat. Once the pot comes to a boil, turn down to medium to simmer and set your timer for 30 minutes.

Meanwhile, turn your broiler on high, place tomatoes and jalapenos on baking sheet with aluminum foil underneath- put tomatoes and jalapenos in broiler for 12 minutes.

Start dicing up 3/4 of your onion, turn chicken, tomatoes and jalapeno to make sure all side are being cooked. After 12 minutes put tomatoes into a blender, slice jalapeno in half, de-seed and peel off the skin. Pour remaining juices from the pan into the blender, take out garlic cloves from the chicken pot and put into blender. Place additional garlic clove into blender as well. Puree the tomato-jalapeno mixture until smooth.

Once chicken is done take out of pot and place on a plate to cool. Discard the bay leaves and pour the chicken liquid into a bowl for later use. Drizzle olive oil into the same dutch oven or sauce pan and saute the diced onions for about three minutes, or until they are golden- on medium heat. After the onions are golden, pour in the tomato-jalapeno puree. Change heat to medium-high and bring to a simmer. Add in 3 cups of chicken stock liquid and let the sauce cook down- about 20 minutes.

After the chicken has cooled, shred chicken and discard skin, bones and icky stuff. Add in Mexican crema and half of the queso fresca, let sit until sauce is ready.

Get oil ready for frying in a skillet or saute pan. When tomato-jalapeno sauce is ready pour 1 1/2 cups onto the bottom of a 13x9 deep, baking dish. Save extra chicken stock and tomato-jalapeno sauce for later use, think soups, rice, pasta or chicken!

Fry tortillas 20 seconds per side, immediately stuff about 2 Tbs of chicken mixture into each tortilla roll up, seam down. (This is easier as a two person job.) Once all tortillas are stuffed, sprinkle any extra chicken on top then pour another cup of the sauce on the enchiladas. Sprinkle with remaining queso fresca and remaining sliced yellow onion.

Bake at 375 for about 20 minutes or until hot and cheese has melted throughout. While enchiladas are baking put can of black beans into a sauce pan with olive oil and heat up. To plate pour beans on the plate then pile enchiladas on top with additional queso fresca. If this doesn't make you want to drink a margarita, I don't know what will!

Piled High Southwestern Burger

Who doesn't love burgers? There is a wide spectrum of burgers, my husband and I went to In n Out Burgers yesterday and they are simple and delicious. I like to find ways to spice it up a bit and create burgers that are outside of the box. On this summer day, my husband and I were working with the last bit of groceries we had. I had ground beef, veggies, eggs, black beans and cornmeal. I decided to whip up piled high southwestern burgers on black beans, green chile cornbread, sauteed onions, a fried egg, cherry tomatoes and fresh cilantro.


The first thing I did was form my beef patties, I added some salt, pepper and garlic then I set those aside and allowed the flavors to merry. I then started to make my green chile corn bread, I used one cup of organic stone ground corn meal, half a can of corn, a small can of green chiles, salt, pepper, one egg, 1/2 cup cheddar cheese and 1/4 cup of milk; mix this altogether and pour into a pan to bake at 350 degrees for about 30 minutes.

While the cornbread was baking, I poured a can of black beans into my sauce pan and cooked them on medium heat. Next, I chopped my onions into thin slices, sliced the cherry tomatoes in half and roughly chopped the fresh cilantro. I put the sliced onion into a saute pan with olive oil on medium heat, along with putting the burgers onto my grill pan with olive oil. My dad always taught me growing up that sauteed onions are the base to any delicious homemade recipe. I use olive oil because it is healthier than butter or other oils, plus I personally love the taste. After a few minutes I flip the burgers, check on the cornbread, stir the onions, stir the black beans and it's time for the eggs. I love eggs, I try to use them in every meal I make...especially fried eggs, I firmly believe fried eggs are Heaven topped on any meal :)

Once the cornbread was done, I removed it from the oven to cool. Then I cracked the eggs into a saute pan with (you guessed it!) olive oil. The key to a fantastic fried egg is generous portion of olive oil (2 Tbs), salt and pepper, then once it starts bubbling up flip over, when the egg is flipped over turn off the heat and let it finish for a few minutes. Then I began to pile my southwestern burgers, first I plated the black beans, next came the corn bread, the burger, sauteed onions, fried egg and last but not least fresh slices of tomato and cilantro.

Once you dig in, the yolk spreads it's luscious, velvety flavor all over the burger and that first bite is darn good! Enjoy! I'd love to hear your comments.
