Wonton a delicious dinner? Try some dim sum.

My mom bought one of those bamboo steamers for making wontons or any sort of dumpling. She was excited to try out a recipe so we gathered our supplies and got to work.

Pork and Cabbage Dim Sum:

1/2 pound ground pork
2 garlic cloves
1 Tbsp grated fresh ginger
2 egg whites
1/2 lemon juiced
1 Tbsp low sodium soy sauce
1 Tbsp sesame oil
1 package of wonton wrappers
savoy cabbage

Mix the filling together, make sure it is all mixed. Take a wonton wrapper, put about a tablespoon of pork mixture into the wrappers then dip your finger into some water and outline the edge of the wrapper with the water. Then use that to seal the dumpling together. Pull up to opposite corners and seal, then pull the opposite corners and seal.

Then on the bottom of each layer cover with a few pieces of savoy cabbage. Continue with the dim sum and place them on top of the cabbage leaves. Then for those who prefer a gluten-free option can use some savoy cabbage leaves as the wonton wrappers. Simply place a tablespoon of mixture in the center of the cooked cabbage and wrap up using the sides like a burrito. Fill up the bamboo steamer basket with one layer only. Bring one to two inches of water in a pot to boil and place steamer on top. Steam for 10-12 minutes. Serve with soy sauce!

Three Bean Salad
1 can kidney beans
1 can cannellini beans
1 can black beans
1 small package of frozen peas
1 Tbsp sesame oil
1 tsp salt
1 tsp pepper

For an easy, delicious protein packed side dish we mixed together a variety of beans (you can use whatever you have on hand) added in some sesame oil to keep in the Asian flair and of course salt and pepper. Let marry in the fridge before serving.

I hope you enjoy this meal as much as my mom and I did. It was fabulous! xoxo Lo

Tropical Bridal Shower

I love hosting parties and making my guests smile. When one of my best friends announced that she was going to get married on St. Thomas, I knew I had to throw her a bridal shower to celebrate. Parties can be as complicated or as simple as you want to make them. I prefer making 90 percent of my foods from scratch and ordering a cake from my trusty baker.

Sticking to a theme is an excellent way to keep organized and cohesive throughout your planning, prep and execution. Since Nikki was getting married on St. Thomas, I created a tropical theme for the entire party.

Fried Plaintains and Guacamole
5-7 plaintains
peanut oil
sea salt
pepper
3 avocados
1/2 onion
1 jalapeno
1 clove garlic
1 roma tomato
cilantro
blue chips

Plaintains can be a little difficult but if done correctly can be delicious! Plaintains can be done a few different ways, you can make little thin discs, long thin slices or giant chunks. If you want crispy plaintains choose one of the first two. For this bridal shower, I chose the small discs. Heat up your peanut oil til bubbling, slice up your plaintains and slowly dip into the oil using your wire utensil. Cook for just a few minutes until golden brown and let rest on paper towels. When all the plaintains are fried, let rest while making the guacamole.

Guacamole should be simple, mash up your avocados, dice up your onion, tomatoes and garlic. Mix everything together, add in a minced jalapeno and diced cilantro. Mix altogether, add salt, pepper and a squeeze of lime to taste. I also served blue corn chips in case the plaintains went fast.

Coconut Meatballs with an Agave Glaze
1 lb of ground beef
coconut flakes
plain bread crumbs
1 egg
salt
pepper
agave nectar

Add egg, bread crumbs, salt, pepper and a bit of the coconut flakes to the ground beef. Mix together very well then form into one inch balls. Bake at 350 degrees for 10-15 minutes. Drizzle agave nectar on top and toss in remaining coconut flakes.

Tropical Baked Brie
one medium wheel of brie
1/2 cup macadamia nuts
1/2 cup coconut flakes
1/2 cup dried mango
2 Tbsp agave nectar
1 Tbsp brown sugar
1 sheet of puffed pastry

Roll out your puffed pastry, cut wheel of brie into two big circle slices. Mix together nuts, coconut, dried mango, agave nectar and brown sugar. Put 3/4 of the mixture in the middle between the halves of brie. Place top half of brie on top and wrap with the puffed pastry. Flip over so the smooth side is on top and add remaining nut mixure on top and bake at 350 degrees for 25 minutes. Serve with crackers or bread. This can be made with really any nut and dried fruit, perfect for any season.

Chicken 'n Veggie Skewers
1 pound of chicken tenders
1 red bell pepper
1 green bell pepper
olive oil
salt
pepper
wooden skewers

Soak the wooden skewers for about 20 minutes in water, before using on the grill so they do not catch on fire. Skewer the chicken and chunks of the vegetables. Grill for about 15 minutes or until chicken is cooked through.

Pork Loin Sliders
1 lb pork loin
yeast rolls (frozen or homemade)
mango glaze (recipe follows)

Drizzle olive oil over your pork loin and add any spices you prefer. I added salt, pepper and smoked paprika. Then bake at 350 degrees for 30-35 minutes (depending on size). Let your yeast rolls rise and bake for about 10 minutes.

Mango Glaze
1 small champagne mango
1/4 cup Greek yogurt
1 Tbsp agave nectar
pinch of salt
squeeze of one lemon

Puree mango together with all the ingredients. Make sure you taste to see if you need to add more sugar or lemon.

Once the pork is done, let rest for 10 minutes and slice into 1/2 inch thick slices. Slice up the rolls as well. Spread your mango glaze on the rolls and add the pork.

Fruit Skewers
2 cups strawberries
1 large mango
5 kiwis

Fruit skewers are easiest with firmer fruits, slice in a delicate, pretty way and add to the skewers. Serve with a fresh whipped cream.

The cake was made by my favorite local baker, I requested a French vanilla cake with mango in between the slices with a buttercream frosting and large coconut flakes on the outside. I had a Hawaiian quote placed on the top to stay with the tropical theme.

As far as the decor went, I used beach towels as the table cloths and added sea shells on top. I created bridal advice cards that went on the table as well. For flowers, you want to choose the best for your theme so birds of paradise would work perfectly.

The bridal shower was a huge success! All of these recipes are quite easy and most of all they are delicious! I hope this helps give you the courage to throw a party for one of your dear friends.

Enjoy! xo Lo

Sweet & Savory

One of my favorite combinations is sweet & savory...I love the way they compliment each other. Ice cream and caramel for example...delicious union! The recipe I am going to share is one that does the very same thing. Pork is one of those meats that greatly compliments sweet tones. I had some butternut squash in my fridge that I needed to use, which became the perfect partner for pork.

One of my favorite ways to cook pork is by using a crust with nuts, any nut combination will do. Two of my favorite are almonds and pistachios. They create a crunchy texture and salty finish which leaves this pork to die for!

Almond-Pistachio Crusted Pork
4 pork chops
1/4 cup crushed almonds
1/4 cup crushed pistachios
1 tsp salt
1/2 tsp pepper
3/4 cup milk

First I take my pork out of the package, grab a fork and poke holes all in it to help tenderize the meat and allow flavors to reach inside the pork. Then I pour the milk over the chops in a bowl. I let that sit for 30 minutes while the milk helps tenderize the pork even further and makes a creamy coating. While the pork is taking a milk bath I get my butternut squash ready.

Roasted Butternut Squash Puree
1 medium sized butternut squash
1 tsp salt
1 tsp oregano
1 tsp sage
1/2 tsp pepper
1/4 chopped onion
1 Tbsp olive oil
1/4 cup milk
1/4 cup chicken stock
1 Tbsp marscapone cheese

Cut the butternut squash in half lengthwise and sprinkle on all the spices/onion, drizzle with olive oil then pop in the oven for one hour at 350 degrees to get nice and tender.

Meanwhile you can get your brussel sprouts ready, warm a pan on medium heat, add olive oil and pour in your brussel sprouts. Sprinkle with a bit more olive oil, salt and pepper. Keep them on medium for about 10 minutes then reduce to low until ready to serve. Mix them around a bit to get crispy on the outside.

When your pork is ready to go, remove from the fridge. Put your chopped nuts in a bowl, add salt and pepper and mix together. Dunk your chop into the nut mixture from the milk mixture and onto a baking sheet. Make sure the pork chops are evenly coated with the nut mixture, to create a crispy crust. Pop that into the oven for 30 minutes at 375 degrees.

One the squash is roasted, remove from the oven and let cool for 10 minutes. Once cooled, peel off the skin and chop up into squares, add to a bowl. Add in the milk, chicken stock and marscapone cheese, stir together. Then use your emulsion blender to smoothly blend all the ingredients together. (If you don't have an emulsion blender, use a regular blender or food processor instead.) Once blended make sure to taste to see if you need any more salt or pepper. The mixture should be thicker than soup, more like a puree.

Then check on your pork by cutting into the meat, if it is dark pink you want to cook it a little bit longer. Once it is done, take it out to rest. Then turn the heat off on your brussel sprouts. Spoon the puree onto your plate then place the brussel sprouts on the outside and place the pork on top of the puree. Then dig in!

Enjoy! xoxo Lo

Pork 'n Pumpkin Chili

For those of you who are getting to know me...I LOVE the holidays. Any holiday...I will go above and beyond to celebrate, in a classy way of course! :) When Fall arrives, which is my favorite time of the year, I love to cook with seasonal produce (aka pumpkins), watch scary movies, sip on Pumpkin Ale and submerge myself into the season.

The other day they had sugar pumpkins at the market so I grabbed three and a massive piece of pork butt to make some fabulous, comfort food.

Here's the recipe:

3 medium sugar pumpkins (or as many as people you have plus one extra for in the chili)
1 package of 15 bean soup (15 different kinds of uncooked beans, discard seasoning package)
5 lbs pork butt
1 bunch of mustard greens
5 cups of chicken stock
1 yellow onion
3 garlic cloves
salt
pepper
nutmeg

First I put the oven on 425 degrees and baked the pumpkins (after de-seeding the inside) for about an hour. Meanwhile I started slicing up the pork butt into inch cubed pieces. I placed my Dutch oven on the stove on medium heat and drizzled some olive oil inside. I chopped up the onion and garlic and let that saute for a few minutes, until golden. Then I added the chicken stock and beans. After cutting up the entire pork butt, I placed that into the chicken stock and cover for 30 minutes.

Once the pumpkin is tender the skin should peel off easily, chop up one of the pumpkins into one inch cubed pieces and add to the chili. (The other pumpkins are for serving in.) Add nutmeg, cook for another hour on low heat while stirring occasionally. In the last 10 minutes add chopped, mustard greens.

While chili is cooking, make the pumpkin-nutmeg cream sauce with:

1/2 cup sour cream
1 tsp nutmeg
2 Tbsp pumpkin (from cooked pumpkin or canned pumpkin)
salt
pepper

Mix all ingredients up until smooth and refridgerate until serving. Once beans are tender and pork is cooked through then served the chili inside the sugar pumpkins and top with cream sauce.

If this recipe doesn't get you into the Halloween/Autumn mood, then I don't know what will...maybe put on Hocus Pocus while eating and sip on a Pumpkin Ale...that should do the trick!

Almond-Cornmeal Crusted Pork with Rice Pilaf & Broiled Veggies

I love a great flavored crust on pork, chicken, turkey or fish. Sometimes you find one and get stuck on using it all the time. When I made the following recipe I was determined to find a new rub that would turn into a delicious crust on my pork. I looked in my fridge and had pork chops, smoked almonds, cornmeal, brussel sprouts, yellow onion and rice. I became inspired and hit the ground running with my apron on.

Almond-Cornmeal Crusted Pork

My husband and I keep almonds in our house as a staple snack, not once did I think of chopping these almonds up and using them as a fabulous pork crust!

1/2 cup chopped almonds
1/4 cup stone ground cornmeal
2 pork chops
pinch of salt
pinch of pepper
pinch of paprika

Chop your almonds, I used half plain and half smoked. Add in your cornmeal and seasoning. Have your grill pan or saute pan on medium heat with olive oil. Once the pork chops are coated on both sides, into this flavorful, nutty mixture place onto your hot pan. Cook for 25-30 minutes, flipping occasionally.

Rice Pilaf

1 cup chicken stock
1 Tbp olive oil
1 cup Basmati rice
pinch salt
pinch pepper
pinch of basil

Meanwhile, add some chicken stock into your sauce pan or dutch oven. Put one cup of basmati rice into the boiling liquid. Add in olive oil and seasonings, cover and stir sporadically.

Broiled Veggies
 1/2 yellow onion
1 cup brussel sprouts
1 clove garlic
1 Tbs olive oil
pinch salt
pinch pepper
pinch basil

Chop up your yellow onion and brussel sprouts into thick slices or halves. Set the veggies aside and make your seasoning mixture by adding one chopped garlic clove to a bowl, pour in the olive oil, add salt, pepper and basil. Give that mixture a toss and add in your veggies to coat. Put another saute or grill pan on medium heat, drizzle a bit of olive oil and add your thick disks of onion and halves of brussel sprouts, face down, that way they'll get beautiful grill marks.

Once your pork is done, make a cut inside, make sure it is mostly white with the faintest pink color. Stir up your rice, turn your veggies and serve. I hope the smoky, nuttiness of the crust on the pork will delight your palate and the comfort of the rice pilaf and veggies will please your soul.

Cornflake Encrusted Pork

How many of you love fried chicken or fried pork chops? With this recipe it'll be like eating fried pork chops but for half the calories! I had tried cornflake encrusted chicken and decided I wanted to try this recipe on my pork cutlet. My husband and I love pork so with this dinner I paired fresh strawberry, spinach salad and sauteed onions and mushrooms.

Ingredient List

2 pork cutlets
1 1/2 cups of basic cornflakes
1/2 red onion
5 button mushrooms
1/2 cup flour
1/2 tsp salt
1/2 tsp pepper
1/2 tsp paprika
2 cups of fresh spinach
1/2 cup fresh, sliced strawberries
1/2 cup sliced cherry tomatoes
salad dressing of choice

Heat oven to 350 and allow pork to tenderize in milk for 30 minutes. Assemble your pork, in one dish put in cornflakes, in the next dish put in flour,  salt, pepper and paprika (mix together), take the pork from the milk and dredge into the flour mixture, back to milk then finally into the cornflakes. Once completely covered put the pork onto a baking sheet covered in aluminum foil. Put in the oven to bake for 25-30 minutes.

While your pork is baking, chop your onion and mushrooms. Heat saute pan to medium heat and drizzle in some olive oil, throw your veggies in to saute. Add a bit of salt and pepper to taste.

Meanwhile, assemble your salad, rinse your spinach, slice your strawberries, cut your cherry tomatoes in half. If you have a salad spinner (I highly recommend one) put your spinach in there to get rid of all the water, if not pat down with paper towels. On your plate pile up our spinach, sprinkle on strawberries and tomatoes. Use whichever dressing you prefer, we used bleu cheese dressing. Once the pork is done add that to the plate with your sauteed veggies. Enjoy this simple, healthy meal!

Grillin' Summer Feast

Are you afraid of your grill? During the summer I always crave grilled meats and veggies...there is absolutely no reason to be afraid of your grill. Anything you cook in a saute pan or in the oven, you can cook on the grill. This day my Aunt and cousin had flown in from New Hampshire and I was determined to grill them a Texas-style meal. My new husband loves pork ribs and I recently discovered a chocolate-spice rub (thanks to Paula Deen) and tweaked it a bit to fit my culinary style. We always check our calendar to see what veggies are in season and try to purchase locally. We decided on: chocolate-spice rubbed pork ribs, baby portabella mushrooms, parmesan corn on the cob and red onions.

Chocolate-Spice Rubbed Pork Ribs

Grab a rack of ribs from your local store, make sure they are not frozen, take them out of their packaging and let them rest at room temperature while you get the rub ready.

Rub
2 Tbs brown sugar
1 Tbs Italian Seasoning
2 tsp onion powder
1 Tbs unsweetened cocoa powder
1 1/2 tsp garlic powder
1 tsp paprika
1/2 tsp red pepper flakes
1/2 tsp cumin
1/2 tsp salt
1/2 tsp black pepper
1 Tbs olive oil

Combine rub ingredients together and brush over rack of ribs. Use your hands to make sure every inch of the rack of ribs is covered with the spice rub. Cover with aluminum foil, let the rub rest and marry into the pork ribs. Once your grill (I prefer charcoal, for flavor purposes) is ready place the ribs on the grill, set your timer for 20 minutes.

Veggies
Grab 4-6 corns on the cob, 1/2 cup of grated parmesan cheese and 1/4 cup of olive oil. Half unwrap your corn stalk leaving a few of the leaves on the outside, drizzle each with olive oil and sprinkle with parmesan cheese and salt & pepper to taste. Then wrap the corn back up and place on grill.

Buy two packages of baby bella mushrooms, cut in half, marinate in soy sauce, cilantro, agave nectar and Worcestershire sauce. Once they have marinated for 30 minutes place on skewers then place on grill.

Mushroom Marinade
1/4 cup soy sauce
1/8 cup cilantro
1 tsp agave nectar
1/8 cup Worcestershire sauce

Grab two red onions and slice thickly, drizzle with olive oil, sprinkle with salt and pepper then place on grill.

I decided to serve all these spectacular dishes outside, in Texas it finally starts to cool down around 7:30-8 p.m.  We impressed our New Hampshire family with some southern comfort, grillin' style food from Texas. Enjoy!
